Water Temperature And Whisking Tips For Matcha

Oct 23, 2026

Matcha is finely ground whole tea leaf, so it is prepared differently from leaf tea. Water temperature and whisking technique strongly affect its sweetness, texture, and foam.

Water Temperature: Keep It Moderate

Matcha is valued for its fresh, umami character. Water that is too hot can draw out bitterness. Aim for about 70–80°C (160–175°F). If you do not have a temperature-controlled kettle, boil water and let it cool briefly in a pitcher or cup. Adjust slightly warmer in winter or cooler in summer to suit your taste.

Sifting: Prevent Clumps

Matcha powder is extremely fine and tends to clump. Sift it into the bowl first using a small strainer. This loosens the particles and helps create a smooth, even foam.

Adding Water and Whisking

Add a small amount of hot water first and mix into a paste. Then add the remaining water. Hold the bamboo whisk vertically and move it in a quick "W" or "M" motion, without pressing too hard. This incorporates air and builds a fine foam. Finish by lifting the whisk gently from the center.

Warm the Bowl and Prepare the Whisk

Rinsing the bowl with hot water prevents the water temperature from dropping too fast and helps stabilize the foam. Soak the whisk briefly in hot water before use to reduce breakage. Store matcha sealed, away from light, and refrigerated after opening.

As tea suppliers, we suggest adjusting preparation to the grade: ceremonial matcha is best whisked and drunk straight, while culinary matcha works well in lattes and baking. With the right temperature and technique, a bowl of matcha reveals its delicate sweetness and smooth texture.
